Save Up: A Soon-to-Be College Grad’s Brain Food

In seven-ish weeks, I’ll be graduating college with a degree in journalism. There’s no need to ask what my plans are for week eight and beyond because I don’t have an answer for you. Fortunately, I’m graduating a quarter early and have given myself a couple of extra months to figure stuff out. You know, the life stuff. I am 95 percent sure about one thing: I won’t be making that much money. I mean, I’m graduating with a degree in journalism.

Luckily, I’m not too worried about feeding myself. I’m actually pretty good at keeping my food costs low at the grocery store. Tonight’s dinner was a great example of an inexpensive, satisfying meal. It also included completely non-American fare. Ha.

Chobani meal

Chobani Plain 0% Greek Yogurt, brown rice, black beans and a sauteed banana. I have Emily from Chobani to thank for the yogurt. She sent me some Chobani love, and I’m really excited to incorporate my favorite brand of yogurt into my meals. I’m also really excited about hunting down their new flavors. Especially the lemon one.

Back to the cookbooks. For seven-ish more weeks.

In june im graduating with a degree in literary journalism as well! and i have nooo clue what i’m going to do either! ppl keep telling me that internships are crucial…so i do have one now, but i’m thinking im going to have to start branching out into bigger publications soon. im scared! best of luck :)

    My favorite inexpensive meal is soba noodles with edamame. Quick and easy!

  5. I graduated with an undergrad in journalism too. Have you done internships? They’re key! Unfortunately, I couldn’t find a journalism job after college and ended up in the social work field, which I love!

  7. That looks amazing!!! Graduating in journalism…that is awesome!!! Usually mexican food is pretty cheap…beans, rice and tortillas. We are so cheap. Oh and we eat soup a lot!! Good to know you love the fanny pack too!

  8. Graduating is such a huge accomplishment! It’s great that you’ve built yourself an extra cushion to figure things out. I’ve been doing that for the past few months, and it was nice to have a break. :)

    My go-to inexpensive meal = tortilla + hummus or omelet.

  10. I always wanted a degree in journalism, but I’m almost giving up…
    Everybody keeps saying I’ll starve!
    Is it possible to earn money and write? Jesus, my whole life plan seems to be falling apart…
    Anyway. Rice and beans is the typical to-go brazilian meal – pretty much everyone eats it everyday for lunch and often for dinner. We usually pair it with some type of protein like beef, chicken or fish and maybe some farofa… And there you go: a typically brazilian meal :)
    Some of us eat bananas with their meal, too – but those sautéed bananas looks pretty amazing! We’ll sure try this one someday over here.

  12. You are so creative! That’s such a south american-inspired dish…I would love that! Trying soon.

    I’ve been making lots of home-made soup and stir frys lately! Sauteeing all my veggies on hand with lots of spices, vegetable broth (adds more flavor and sizzzle–love it), and lentils/tofu/chickpeas over a cup of brown rice has been a fave!
